Ingredients

  • 12 pieces cherry tomatoes for eyeball appearance
  • 12 ounces fresh mozzarella balls small mozzarella balls or cut into small discs
  • 12 leaves fresh basil leaves for the iris and color contrast
  • 3 tablespoons balsamic glaze for drizzling over the assembled bites

Equipment

  • Toothpicks
  • Small spoon or brush

Method

  1. Place each cherry tomato on a clean work surface and slice off the stem end to create an open cavity. This will serve as the "eyeball" socket.
  2. Carefully insert a fresh mozzarella ball into each tomato cavity, pressing gently to secure it and resemble an eyeball.
  3. Fold a basil leaf in half and place it on top of each mozzarella ball to mimic an iris and add a pop of vibrant green.
  4. Skewer each assembled eyeball with a toothpick, piercing through the tomato, mozzarella, and basil for stability and easy handling.
  5. Arrange all the skewers on a serving platter, keeping them upright for best visual effect.
  6. Using a small spoon or brush, drizzle balsamic glaze over each eyeball to create the appearance of bloodshot, veiny eyes for a creepy effect.
  7. Serve immediately to enjoy the fresh textures and striking appearance, or refrigerate briefly until ready to present.

Notes

For extra creepiness, you can add tiny black peppercorns on top of the mozzarella to resemble pupils.
